A commercial clam- and crab-shucking operation for 10 years before becoming a restaurant in 1965, The Crab Claw in St. Michaels, Maryland, overwhelms by keeping it simple. Gingham cloths cover sturdy tables overlooking St. Michaels Harbor. Live blue crab, clams, and oysters are off-loaded from watermen's boats at the restaurant's dock and prepared in just a handful of ways, each of which has been perfected.
