Eats: Another Man’s Treasure

Adventurous eaters should look into attending the first-ever Trash Fish Dinner put on by Chefs Collaborative on March 10 in Cambridge, Massachusetts.

Eight renowned chefs in the Boston area, New Hampshire, and Rhode Island will be preparing a menu made from the One That You Wish Got Away. “The seafood on the menu are types of fish that there really isn’t a market for,” says Melissa Kogut, executive director of Chefs Collaborative, a 20-year-old organization that promotes a national network of chefs who work for sustainability in the food supply, including seafood. “You won’t see this fish at your local fish market for example. We hope the event will raise awareness about sustainable sourcing of seafood.” Bait thieves such as dogfish, scup, and the illustrious sea robin (shown, inset) will be featured in courses from Michael Scelfo (shown, with a non-trash striped bass) of Russell House Tavern in Cambridge, Massachusetts, Mary Reilly of Enzo Restaurant & Bar in Newburyport, Massachusetts, Jake Rojas of Tallulah on Thames in Newport, Rhode Island, Rich Garcea of 606 Congress in Boston, and others.
